Fresh Black Bean & Corn Salsa
This recipe is can be made in 15 minutes or less, is packed with bright, fresh flavor, sweetness, and the perfect amount of tang.
This recipe is amazing as a party appetizer with chips, on tacos or enchiladas, as a side dish, or on top of a beautiful bed of greens to make the best salad!
2 cans Black Beans
1 cup Red or White Onion, diced
4 Tomatoes, diced
16 oz frozen Corn, thawed
1/4 cup Lime Juice
1 bunch Cilantro, chopped
1 Jalapeño, chopped (optional)
1 avocado, cubed (optional)
3/4 tsp Salt, or 1 tbsp Braggs Liquid Aminos (optional)
Open and drain the beans. Rinse.
Add all ingredients except avocado to a mixing bowl and combine well. Gently stir in the avocado.
Place in the fridge for at least one hour to allow the flavors to meld.
Store in an air tight container.
