I have served these Not Dogs to countless people ranging from my husband’s hockey team to children I used to babysit. The verdict is always the same.
“Why didn’t you make more?!”
Let’s face it, real hot dogs are gross when you know what they’re made out of… plus processed meats have been classified as a Group I carcinogen, known to cause cancer, by the World Health Organization.
The good news is you don’t have to give up that taste you love when you have these Not Dogs!! Parboiled and marinated carrots take on a smoky flavor with just the right texture. Add your favorite toppings and devour!
1⁄2 cup Water
5 tbsp Braggs Liquid Aminos (or soy sauce)
1 tbsp Mustard
1 tbsp Smoked Paprika (or 1 tsp liquid smoke)
1 tbsp Onion Powder
1 tbsp Italian Seasoning Spice Mix
1/4 tsp Salt (optional)
12 Whole Wheat Buns
Your choice of toppings: ketchup, mustard, sauerkraut, guacamole, beans, slaw, etc
Fill a large pot half way with water. Bring to a boil.
As the water boils, peel the carrots. If desired, round the ends into a hot dog shape with the peeler.
When the carrots are peeled and the water is boiling, add the carrots to the pot and turn the heat down to a very gentle boil. Cook for 8 minutes or until the carrots can be pierced with a fork but are still firm. Drain in the sink and allow them to cool.
When the carrots are cooking, add the remaining ingredients (except buns and toppings) to a bowl and mix until combined. Add the marinade to a long airtight container that fits the carrots (or a large sandwich bag). Add the cooled carrots to the container or bag and shake until they are all coated.
Place in the fridge and allow them to marinate for at least 6 hours (or longer for a stronger flavor).
After they have marinated and soaked up all the yummy the flavor, place on the grill and cook as you would normal hot dogs or veggies. Once they have grill marks, place the Not Dogs on your choice of whole wheat bun or lettuce boat and add desired toppings!
