Sun dried tomatoes will always have my heart <3
After spending time in Italy, I came back with three massive bags of sun dried tomatoes.
I couldn't wait to start creating with these babies!
This spread can be used on sandwiches, wraps, lettuce boats, as a veggie dip, as the cream in a soup, or thinned out with a little water and used as a salad dressing :)

Ingredients

  • ½ cup Sun Dried Tomatoes [dried, not packed in oil; unsulfured]
  •  ½ cup Cashews
  •  1 cup Water
  •  2 ½ tbsp Lime Juice
  •  2 tbsp Nutritional Yeast
  •  1 tbsp Onion Powder
  •  1/4 tsp salt [optional]

Directions

  1. In a small bowl, cover Sun Dried tomatoes and cashews in water and allow to soak for 30 minutes.
  2. Drain and place all ingredients in a blender. Blend until super smooth and creamy!
