Strawberry Ice Cream

As the holiday season approaches, I'm always on the lookout for delicious and festive treats that everyone can enjoy. This year, I'm excited to share with you a recipe for a dairy-free strawberry ice cream that's so creamy and flavorful, you won't believe it's made without any dairy!

This homemade ice cream is made with a simple base of strawberries, coconut milk, cashews, vanilla, and sweetened with dates. It's rich and creamy, with a burst of sweet and tangy strawberry flavor. Plus, it's naturally vegan and gluten-free, so everyone can indulge.

This dairy-free strawberry ice cream is the perfect way to end a holiday meal.

Ingredients:

  • 2 cups frozen strawberries

  • 1 can (13.5 ounces) full-fat coconut milk

  • 1/2 cup raw cashews, soaked for at least 1 hour

  • 10 Medjool dates, pits removed

  • 1 teaspoon vanilla extract

Instructions:

  1. Drain and rinse the soaked cashews (you can skip soaking the cashews if you have a Vitamix).

  2. In a blender, combine the strawberries, coconut milk, cashews, dates, and vanilla extract. Blend until smooth and creamy.

  3. Pour the mixture into a freezer-safe container and freeze for at least 8 hours, or overnight.

  4. When ready to serve, run your scooping spoon under hot water to easily scoop the ice cream. Top with desired toppings and enjoy!

Tips:

  • For a sweeter ice cream, add more dates to taste.

  • For a more flavorful ice cream, let the strawberries sit in the freezer for at least 24 hours before blending.

  • If you don't have an ice cream maker, you can still make this ice cream! Simply pour the mixture into a freezer-safe container and freeze for 4-6 hours, stirring every hour or so to break up the ice crystals.
